Pasta has got to be one of those ultimate comfort foods, wouldn’t you agree? It’s a remarkably versatile ingredient, inexpensive and quick to cook too, so you’re never more than a few minutes from a steaming hot bowl of indulgent carbohydrates.

I find it fascinating how the various types of pasta – spaghetti, fusilli, linguine, and ravioli – are all prepared with the same basic ingredients. Still, their different shapes mean they taste vastly different from each other and, therefore, suit different sauces.

I’m a big fan of fusilli; the little spirals of pasta hold creamy sauces perfectly. I cook this type of pasta so often that my youngest calls it ‘normal’ pasta. It’s the pasta against which all other pasta is compared.

This recipe is one of our family midweek favourites.

Ingredients for this easy chicken pasta bake

  • 300 grams of dried fusilli pasta
  • 500 ml roasted cherry tomato sauce
  • 180 grams of cream cheese
  • 160 grams of leftover roast chicken breast
  • 100 grams mature cheddar cheese

Instructions

  1. Preheat your oven to 220 C.
  2. Prepare the pasta according to the packet instructions.
  3. Halve 900 grams of cherry tomatoes and arrange them, cut side up, on a baking tray.
  4. Drizzle with olive oil, sprinkle with sea salt and two teaspoons of oregano, and roast for 15-20 minutes.
  5. Leave to cool slightly, and then puree in a high-speed blender.
  6. Turn oven down to 180 C.
  7. Stir the cream cheese into the sauce. Allow to simmer for a few minutes to reduce into a nice, thick sauce. Add a splash of milk if you want a more liquid sauce.
  8. Drain the pasta and stir in the sauce and leftover roast chicken. Spoon into a large casserole dish and sprinkle with grated cheddar.
  9. Bake for 20 – 25 minutes until the cheese is golden and bubbly.

    Ingredients

    • 900 grams cherry tomatoes

    Equipment

    1 baking tray
    1 high speed blender
    1 stockpot for cooking the pasta
    1 casserole dish
    Prevent your screen from going dark

    Instructions 

    • Preheat your oven to 220 C.
    • Halve 900 grams cherry tomatoes and arrange them, cut side up, on a baking tray.
    • Drizzle with 4 tbsp olive oil, sprinkle with Shetland sea salt and 2 tsp dried oregano and roast for 15-20 minutes.
    • Leave to cool slightly, and then puree in a high-speed blender.
    • Turn oven down to 180 C.
    • Meanwhile, prepare 500 grams dried fusilli pasta according to the packet instructions.
    • Stir 180 grams cream cheese into the sauce.
    • Allow to simmer for a few minutes to reduce into a nice, thick sauce. Add a splash of milk if you want a more liquid sauce.
    • Drain the pasta and stir in the sauce and 160 grams leftover roast chicken, cubed, and 1 handful fresh basil leaves, torn.
    • Spoon into a large casserole dish and sprinkle with 100 grams mature cheddar cheese.
    • Bake for 20 – 25 minutes until the cheese is golden and bubbly.

    Recipe tips

    You can substitute the roasted cherry tomato sauce with a jar of your favourite tomato-based pasta sauce for a quicker evening meal.

      We love pasta here too, and fusilli is probably the one I buy most too. For little children it’s the easiest to get on a fork I think. This looks delicious. I rarely add cream cheese because I never have it in the house any more

      I must admit I cook with oil and butter all the time, but usually just splosh some oil in and drop in a pat of butter, letting them melt together. I’ve never come across this olive oil butter mix but I’d look out for it now.
