The Bacon Jam Recipe

Smoky back bacon, red onions, Canadian maple syrup, balsamic vinegar, dijon mustard and Worcestershire sauce are slow-cooked to perfection to make the most delicious, sticky, multi-purpose bacon jam recipe.

What you’ll need…

  • 300 grams smoked back bacon, cut into 1/2 inch pieces
  • 1 medium red onion, finely chopped
  • 80 ml Canadian maple syrup
  • 3 tbsp Balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 80 ml water
  • salt & pepper, to taste

How to make it

  1. Add your chopped bacon to a cold, dry pan and then heat over medium-high heat. 
  2. Fry the bacon for 10-15 minutes, stirring often, until it starts to crisp up and brown.
  3. Lower the heat to medium and add the onions. Cook for a further 8-10 minutes until the onions begin to soften.
  4. Add the remaining ingredients and turn the heat down to low.
  5. Simmer for 30-45 minutes with the lid on, stirring occasionally, until it is thick and glossy. Add a little more water, if needed. 
  6. Cool for 10 minutes and process to a coarse blend in a food processor or blender.

What can I use bacon jam for?

  • toasted crumpet with smashed avocado and a poached egg 
  • on a baked potato with cheese (warmed up so it melts the cheese)
  • serve on a beef burger 
  • spread it on toast
  • add to it your grilled cheese sandwich
  • panini with bacon jam and cheese
  • try it as a ravioli filling
  • quesadillas with bacon jam and cheese
  • spoon it out of the jar and get it in you
  • add a spoonful to your bolognese sauce 

How long does bacon jam keep in the fridge?

  • two weeks, if you don’t eat it all immediately.

Ingredients

  • 300 grams smoked back bacon
  • 1 medium red onion finely chopped
  • 80 ml Canadian maple syrup
  • 3 tbsp balsamic vinegar
  • 1 tbsp dijon mustard
  • 1 tsp Worcestershire sauce
  • 80 ml water
  • Shetland sea salt to taste
  • freshly ground black pepper to taste

Equipment

large cooking pot
wooden spoon
high speed blender
200 ml preserving jar

Instructions 

  • Add 300 grams smoked back bacon, chopped, to a cold, heavy-based pan and heat over medium-high heat.

  • Fry the bacon for 10-15 minutes, until it begins to crisp and brown.
  • Lower the heat to medium and add 1 medium red onion, finely chopped. Saute gently for a further 8-10 minutes until the onions begin to soften.
  • Add 80 ml Canadian maple syrup, 3 tbsp balsamic vinegar, 1 tbsp dijon mustard, 1 tsp Worcestershire sauce and 80 ml water.

  • Season well with Shetland sea salt and freshly ground black pepper, reduce heat to low and pop the lid on.
  • Simmer for 35-45 minutes until the jam is thick and glossy.

  • Allow to cool for 10 minutes before blending to a coarse spread in a high-speed blender or food processor.

    We live about three hours north-east of Banff AB. Avocados have become quite popular in Canada, but they can be rather expensive here. Almost $2 a piece at times! Which makes me wonder how expensive they must be in Shetland !?

    Hmm being lassoed by a cowboy sounds found and the crumpet looks good. The whole meal does, but I couldn’t eat sweet with savory. I am sure my husband would like to try the jam though.

    I love watching the old British comedies on PBS so I’ve heard of crumpets, but never seen a recipe using them! At first glance I thought it was an English Muffin. I absolutely love avocado and bacon, so this looks like a wonderful breakfast or snack.

    I’ve always loved crumpet. We don’t get them much in HK. If we could I’d be making this recipe. Love your lasso story, I can imagine that for a while you looked back and kicked yourself for being clouded by your temper – ha ha!

    Ok so this is my kind of breakfast. Ah yes the Calgary Stampede….I remember those days. We always went west every summer. My mom was from Saskatchewan and dad was from Manitoba. As for crumpets….well my husband’s grandparents were from England. He LOVES crumpets with condensed milk!! I love them with peanut butter…but this great looking sandwich is a “must try” for sure.

    Ooooh you can’t beat a good crumpet, gluten-free or not. I usually just have them with far too much butter (love the way it melts into the holes!), but this looks far more exciting! Can’t wait til I can eat runny eggs again!
