I know I’ve said it before, but my favourite kind of meals are a mish-mash of different cuisines, textures and flavours. I like a wide variety of sensory and flavour experiences when I eat.

Roasted vegetable couscous salad is one of those multi-textured dishes – you’ve got your soft couscous spiked with lemon and harissa, your salty feta cheese, your crispy and crunchy roasted peppers and courgettes. It’s a perfect accompaniment to Egyptian lamb meatballs cooked in tomato sauce (a new recipe I was trying from Amina’s Home Cooking), squeaky Greek halloumi cheese with a drizzle of fiery chilli oil and toasted cumin-spiked hummus with a drizzle of lemon olive oil.

This roasted vegetable couscous salad is also super easy to make too, and the spoonful of harissa paste gives it a nice little kick. Fire, I tell you, I want all the fire! I always serve a side of cooling yoghurt though, for those who need it.

This is one of those meals where you can leisurely potter about your kitchen enjoying the experience of cooking and combining flavours. A good quality knife set certainly helps with it comes to prepping your vegetables.

Ingredients for roasted vegetable couscous recipe

Ingredients needed

  • 1 red pepper
  • 1 yellow pepper
  • 1 courgette
  • 4 garlic cloves
  • 3 tbsp olive oil
  • 1 red onion
  • 1 tsp cumin seeds
  • 1 tbsp harissa paste
  • 250 grams couscous
  • 1/2 pint hot vegetable stock
  • 1 lemon – zest & juice
  • 1 handful flat-leaf parsley
  • 100 grams feta cheese
  • salt & pepper to taste

Viners Copper Knife Set with chopped vegetables

Equipment needed

  • sharp knives – I’m using Viners Titan 6-Piece Copper Knife Set
  • baking sheet – I use a black iron one from the Netherton Foundry in Shropshire
  • small mixing bowl
  • lemon zester & juicer
  • fork – I’ve got the Viner’s Mayfair Cutlery Set
  • measuring spoons
  • measuring jug
  • large serving bowl

 

How to make roasted vegetable couscous

Instructions

  1. Cut the red pepper, yellow pepper and courgette into bite-sized pieces. Place on a baking tray with the garlic (leave it unpeeled) and drizzle with 2 tbsp of the olive oil. Roast at 200 C/ 180 C fan for 20 minutes.
  2. Add the red onion, quartered, cumin seeds and harissa and roast for a further 10-20 minutes. Cool.
  3. Meanwhile, pour the hot vegetable stock over the dry couscous. Cover and leave for five minutes.
  4. Prepare the salad dressing by combining the remaining olive oil with the juice and zest of one lemon and with the roasted garlic.
  5. Finely chop plenty of flat-leaf parsley and mix together with the couscous, roasted vegetables, feta cheese and salad dressing.
  6. Serve at room temperature.

Regular readers will know I moved house this summer. I took very little with me, just what I needed and a few personal items that meant something to me. It was a perfect time to declutter and start afresh.

    two of my daughters are vegetarian, I’ve been finding it difficult to find something we all like to eat but this sald looks really good. I love the addition of serving it with haloumi too! We can’t get enough of that cheese in this house. I’ve been looking for a really good knife set to replace my current ones that are falling apart and are constantly blunt, even after sharpening. These look like they’ll last really well. What a great post and receipe, I’ll definitely be giving it a go!

    Sounds like a gorgeous filling salad, as salads can sometimes be not that filling but this looks lovely filling, and colourful. I’ve heard only good things about viners and know they did cutlery but didn’t know they did knives. I would love these in my kitchen to make this wonderful salad.

    The recipe looks great, although I don’t think it is something we would eat. I have recently rediscovered cooking so am finding that I am having to replace or buy new equipment constantly – knives are very much on this list!!

    This recipe looks great, but I think I am going to substitute the cous cous with quinoa as I can’t eat wheat. I’ve needed a new kitchen knife set for a long time, so this would be amazing!

    the knives look bvrilliant… well made, sturdy – like they would hold well wehn in use, and have a pleasing look to them aesthetically. The recipe… Ive never actually made couscous and this recipe has now made me want to try it so next payday I know what I will be buying – the ingredients for this recipe which ive now copied, pasted and saved to wordpad to save me hunting for it ahah

    Not a fan of cous cous at all, never liked the taste regardless of what it is mixed with but the rest of the ingreds would make a nice greek salad. Viners knives are always gorgeous, they do know how to make them

    This looks delicious – I want to make more couscous salads but as with all grain salads I get annoyed at how a huge pile of vegies just gets swamped by the grains – I really love the way you serve it – perhaps that is the key with these grain salads

    The recipe sounds good but i’d have to double check to make sure of the syn values on stuff being a slimming world member. Most of it appears to be fine but always worth double checking. The knives look great, i’m currently using a generic set from asda. They do they trick but could always do with an upgrade!
