Strawberry Milkshake Cupcakes

Summer, allegedly, is going to hit Shetland on Thursday next week, they say. They also say that this has been the worst summer weather for 30 years. Rain, drizzle, cold… and now fog sits on these islands, preventing flights from landing. The wind has stopped, but oh my the midges are out in full invisible biting force!

It’s cupcake-making weather!

I made these cupcakes yesterday morning, inspired by a packet of strawberry milkshake sweeties I’d been sent to taste test in a hamper from Nottingham-based sweetie company The Treat Kitchen. That and the fact there were two tubs of Betty Crocker strawberry icing lurking in my pantry for the last few months, icing bought in error.

In other news – the scaffolding is mostly down from around our house. We’ve had major external renovations going on since January this year, and the end is nigh! We’ve had new external blockwork, a new roof, new windows, new doors and new harling. Now that the scaffolding is gone we can get back into the garden again, or at least, what’s left of it – the landscapers should be here in a few weeks to sort it out. The youngest and I had a little explore this morning – and a single two inch high mint plant at the opposite end of the garden in a giant pile of rubble is all that is left of my herb rockery. The new garden will be a blank canvas and I’m looking forward to working with it.

Rummaging around in the remains of the builder’s mess I found two perfectly good large, square, roof tiles – the ideal size for food photography backdrops for my kitchen. I asked the foreman and he said I could have them, so I brought them into the house, washed them down and took the photographs of these cupcakes on them.

Pretty effective, no? 🙂

Far too moreish! The Nottingham Rock with its white, green and red stripes, was particularly appealing to the younger kids, while DD loved the radioactive blue raspberry sours. Personally, besides the jelly beans, I’m keen on the strawberry milkshake sweeties – soft, chewy marshmallow sweets with a mild strawberry taste. Ingredients

  • 150 grams butter
  • 150 grams granulated sugar
  • 2 large free-range eggs
  • 150 grams self-raising flour
  • 1 tsp vanilla extract
  • 2 tbsp full fat milk
  • 2 tubs Betty Crocker strawberry icing
  • 12 strawberry milkshake sweeties

Prevent your screen from going dark

Instructions 

  • Preheat oven to 190 C/ 170 fan and line a 12 hole muffin tin with cupcake cases.
  • Cream together butter and sugar until light and fluffy. Add the eggs, one at a time along with a spoonful of flour, and beat well. Mix in the vanilla.
  • Add the remaining flour and combine well. Add enough milk to make the batter a soft, dropping consistency.
  • Bake for 15-20 minutes until golden and springy. Transfer to a wire rack to cool completely.
  • Frost with the strawberry icing using a large star shaped nozzle on the piping bag. Top with a strawberry milkshake sweetie.

    *Confessing* that I have a sweet tooth and probably eat more sweeties than I should – I would love to have a jar each of most of them, but if had to pick just 2 bottles I think I’d go for the bottle of Strawberries and a bottle of the Dolly Mixtures. I’ve opted for those that my better half might share a few as others he doesn’t eat/like – the kids might even get a look-in when they visit 😉 LOL
