I have been blogging since December 2011. I began it as a procrastination hobby from studying for my Life Sciences degree with the Open University, and now it’s become my full time self-employment. I’ve learned so much over the years. I’ve met so many wonderful blogging friends both online and in person, and I’ve had the opportunity to work with a wide variety of brands, trying out novel kitchen gadgets, accessories, pans and foodstuffs. Things I never would never have had the opportunity to try if I hadn’t been blogging.
I feel very fortunate to continue to have these opportunities. I never know what might pop though my email inbox every day!
One of the best things I’ve ever had the chance to use is the Copper TriPly range from ProWare. Their unique innovative design consists of three distinct layers. First, the outer layer is copper, a metal used for centuries for its ability to conduct heat evenly. Plus, it looks fantastic. You can either leave it shining or allow it to naturally tarnish, creating unique, individual works of art out of each pan.
The pans have an aluminium core, also known for superior heat conduction and a brushed stainless steel interior for easy cooking and cleaning. Stainless steel rivets and handles make for a lifetime of safe cooking.
I have to confess that when I received these lovely pots and pans in 2013 (pictured above brand new out of the boxes) I let them sit in the corner of my kitchen for a few days, like Smaug’s treasure, not wanting to use them because they were so beautiful. I’d never owned such a fine quality set of cookware before and I was hesitant to use them.
This hesitation didn’t last long, and I have, for the last three years, used the ProWare 24 cm saute pan nearly every single day without any visible depreciation in quality. If anything, it, along with the rest of the set I have, just get more gorgeous looking with each use. I love how the copper tarnishing changes each time I use a pan.
This pots and pans set has become my every day set, and there’s no way I could go back to using something of inferior quality. The difference this set has made in my cooking is remarkable. You can even eat straight out of the pan, as in the case of the tomatoes, chorizo and eggs recipe pictured above from Joe Wicks’ Lean in 15 cookery book!
I should, perhaps, give them a nice scrub and clean with some Brasso or some salt and white vinegar to bring them back to their nice shiny original selves – but I like the rustic look. A lot. It gives them character, don’t you think?

Sautéed mushrooms make an ideal accompaniment to a main dish or are delicious on their own, served either on toast or with good bread. You can vary the ingredients according to your budget or what’s in the cupboard:
Cleaned, sliced mushrooms – a good couple of handfuls per person. You can use the cheapest you can find if you wish (when I was a student I used to buy them by the scoop from the cut-price stall in the market) or if you want to push the boat out, a selection of wild mushrooms make a veritable feast.
The sautéing medium: butter will enrich the flavour, but you can use olive or vegetable oil if you prefer.
Seasoning: salt & pepper. I also add a pinch of piment d’espelette, a dried French chilli pepper; chilli flakes would do just as well. Or if you want to avoid the spice and head for creamy indulgence, a dollop of crème fraiche or double cream will do the trick. A tablespoon of chopped parsley really brings the dish to life – and yes, chopping is better than a sprig!
1. Heat the pan over medium high flame; add the cooking medium and allow it to heat
2. Sautée the mushrooms for 4 – 5 minutes. Don’t move them around too much – you want them to take some colour – but give them a shake now and then to turn them over and cook them evenly.
3. When almost done – season. If you’re using cream, add it now and let it bubble.
4. Serve on toast or in a bowl with good bread; and don’t forget to garnish with parley – it really does make a difference.
