- vegetable shortening for greasing
- 150 grams butter, room temperature
- 260 grams of granulated sugar
- 1 tbsp dried lavender flowers
- 1 medium lemon juice and zest
- 2 duck eggs (or 3 hens eggs)

- 1/2 tsp bicarbonate of soda
- 1 tsp baking powder
- 175 ml full-fat milk

- 100 grams of icing sugar

Instructions
- Preheat oven to 160 C (fan), 180 C/325 F and grease your bundt tin with vegetable shortening (not butter!)
- Cream the butter and sugar together until light and fluffy. Add the dried lavender flowers, lemon juice and zest and beat well.
- Add the duck eggs, one at a time, beating well after each addition.
- Sift the flour, bicarbonate of soda and baking powder together in another bowl.
- Add the flour mixture and the milk to the egg/butter mixture a spoonful/splash at a time, beating well after each addition.
- Spoon into the prepared bundt tin, smoothing over the top so that the outer edges are higher than the middle.
- Bake for 50 minutes to an hour. A skewer inserted into the centre of the cake should come out clean.
- Leave to cool upright for 15 minutes before turning out onto a wire rack to cool completely.
- Add enough lemon juice to the icing sugar to prepare the drizzle to make a thick icing. Drizzle over the top of the cake and sprinkle with lavender flowers.

This is one gorgeous cake. I love hoe you used the shape of the cake to frost it. I don’t think I’ve ever seen a recipe calling for duck eggs, especially in a baked cake. Lemon drizzle is a massive family favourite, I love lemon as a cake flavour, not sure about lavender as I find the scent a bit yuck so not sure how it would be a in a cake. I suppose there’s no harm in trying

Of all the baking I do, I’ve never actually made a bundt cake before! I’d probably start with lemon, because it’s my all-time favourite cake flavour (although maybe play with including orange and lime too). I’d also attempt a gluten-free one, so that my Dad could enjoy it too!

If I win I’ll try and make a 2 tone chocolate and vanilla cake with each swirl a different colour! I’ve seen it before but think it would be easier to do in a silicone tin!
