Tagliatelle with Cherry Tomatoes, Artichokes, Feta and Rocket
This easy tagliatelle recipe with cherry tomatoes, artichokes, feta and rocket takes only ten minutes to make, making for a perfect Friday night dinner for one.
Bring a pan of salted water to the boil and cook the pasta for 3-4 minutes.
Meanwhile, heat olive oil (or use oil from the jar of artichokes) in a saute pan. Saute the halved cherry tomatoes (cut side down) and sliced artichokes for 3 minutes.
Drain the cooked pasta well.
Add the rocket to the bottom of a serving bowl and top with the drained pasta.
Spoon over the contents of the saute pan and sprinkle with feta cheese.
Garnish with fresh basil leaves and season well to taste.
