Instructions
Heat sunflower oil in a saute pan over a medium heat. Saute the onion, carrots, celery and garlic until they begin to soften, about five minutes.
Add the Scotch Lamb mince and season well with salt and pepper.
Fry the Scotch Lamb mince until browned all over.
Add the tomato puree and dried thyme. Stir until the lamb is coated in the tomato puree.
Add the lamb stock and tinned tomatoes. Cover, reduce the heat and simmer for 30 minutes, stirring occasionally, until the sauce is thick and reduced.
Serve with linguine, tagliatelle or pappardelle pasta.
