Slice SPAM® Chopped Pork and Ham lengthwise into 5 mm wide slices. Using a small star-shaped cookie cutter, cut the SPAM® Chopped Pork and Ham into stars.
Heat a non-stick frying pan over a medium-high heat. Add the SPAM® Chopped Pork and Ham stars and fry until browned on both side. Set aside.
Place the frozen peas in a pot of boiling water and cook for 90 seconds. Drain and rinse under cold water to cool.
Heat the butter and sunflower oil in a saute pan and gently saute the shallots and garlic until softened.
Place the peas, shallots, Parmesan cheese and fresh mint leaves into a small food processor and season to taste. Process until combined, but still chunky in texture.
Slice the bagette into 1 cm thick slices and toast under a grill.
Lightly butter the crostini and top with the crushed pea mixture. Finish off with a SPAM® Chopped Pork and Ham Star and a tiny sprig of mint.
