Place the walnut halves in a bowl and drizzle over the honey. Stir gently to coat.
Sprinkle over the soft brown sugar and stir gently until each walnut half is coated in sugar.
Spread out in a single layer on a large baking tray.
Roast in the centre of the oven for 20 minutes, stirring halfway.
Remove from the oven and carefully transfer to a non stick silicone mat, or other non-stick surface, separating any nuts stuck together, and leave until cooled completely.
Store in an airtight container for up to two weeks.
