Tagliatelle with Cherry Tomatoes, Artichokes, Feta and Rocket

  • Bring a pan of salted water to the boil and cook the pasta for 3-4 minutes.
  • Meanwhile, heat olive oil (or use oil from the jar of artichokes) in a saute pan. Saute the halved cherry tomatoes (cut side down) and sliced artichokes for 3 minutes.
  • Drain the cooked pasta well.
  • Add the rocket to the bottom of a serving bowl and top with the drained pasta.
  • Spoon over the contents of the saute pan and sprinkle with feta cheese.
  • Garnish with fresh basil leaves and season well to taste.
