Introduction

So the kids have gone back to school this week (surely I’m not alone in heaving a huge sigh of relief about this?!). What a crazy busy summer it was, but I’m looking forward to getting back into a semi-normal routine again.

New term time is a busy time for both children and parents, and packing a nutritionally-balanced breakfast can be made much easier thanks to America’s famous smooth and creamy SKIPPY® Peanut Butter.

Made from sweet American peanuts with a finer grind which just melts in the mouth, SKIPPY® Peanut Butter makes the perfect protein-packed addition to school morning breakfasts or for quick and easy after school snacks, like my No-bake SKIPPY® Peanut Butter & Chocolate Energy Bites.

Ingredients

  • SKIPPY® Peanut Butter – Creamy
  • quick cook porridge oats
  • desiccated coconut
  • ground flaxseed
  • cocoa powder
  • honey
  • mini chocolate chips
  • vanilla
  • salt

How to make no bake peanut butter balls

Instructions

  1. Place the porridge oats, coconut, ground flaxseed, cocoa powder, chocolate chips and salt in a large bowl. Stir.
  2. Add the SKIPPY® Peanut Butter, honey and vanilla.
  3. Mix well until combined.
  4. Roll the mixture into one inch balls, and roll in extra coconut.
  5. Chill until needed.
  6. Serve!

My kids absolutely love these little energy bites. I don’t know about your kids, but mine are absolutely starving when they get home from school. The first place they head for (after dumping their jacket & bags on the floor by the front door) is the fridge.

These energy bites will keep for a good few days too, stored in the fridge, and the coconut coating helps keep them from sticking to each other. They’re also great as a quick on-the-go breakfast boost for, say, any children who haven’t got themselves up out of bed in time for breakfast at the kitchen table (despite being reminded 50 million times!). Just sayin’.

Tips for making these no-bake energy bites

  • use your hands to mix everything up; don’t be afraid to get messy
  • replace the cocoa powder with ground flaxseed if you prefer a less chocolatey bite
  • mix up the flavours – why not use dried apple and a sprinkle of cinnamon instead of chocolate chips, replacing the honey with maple syrup
  • roll in cocoa powder instead of coconut for an extra chocolate boost
  • use peanut butter chips instead of chocolate chips

Back to School breakfasts (and After School Snacks) made easy with yummy SKIPPY® Peanut Butter

For breakfast, simply spread SKIPPY® Peanut Butter on to toast or fruit, and fans of crunchier peanut butter can also enjoy the Extra Crunchy variety which contains peanut pieces in a deliciously creamy mix and tastes USA-mazing mixed into porridge with a spoonful of strawberry jam.

I’ve used the Extra Crunchy variety to make apple pizzas and ‘ants on a log’, something my grandmother used to make for me when I was a child.

Apple Pizzas

Slice and core your favourite crunchy apples into 1 cm thick slices, spread with SKIPPY® Peanut Butter and top with your favourite ingredients. How about fresh fruit, seeds and a drizzle of honey, or perhaps some mini chocolate chips and micro marshmallows for a little treat!

Ants on a Log

Cut celery sticks into four inch long pieces, wash and dry thoroughly. If you don’t dry them enough the peanut butter won’t stick! Fill the middles with your favourite SKIPPY® Peanut Butter and top with four or five raisin ‘ants’.

Ingredients

  • 120 grams porridge oats
  • 50 grams desiccated coconut plus extra to roll
  • 150 grams SKIPPY® Peanut Butter Creamy
  • 35 grams ground flax seeds
  • 20 grams cocoa powder
  • 100 grams mini chocolate chips
  • 1 tsp vanilla extract
  • 125 grams runny honey

Instructions 

  • Mix together the dry ingredients in a bowl.
  • Add the wet ingredients, and combine well.
  • Form into 24 1-inch balls, and roll in extra coconut, if desired.
  • Chill in the fridge until needed.

    I have been thinking of making some energy balls as my son gets through enough snacks and something like this can be pricey. I love Naked peanut butter and date bars.
