Bored with salad? Spice up your diet with these green recipes!
Greens. We all know we should eat more of them, but sometimes it’s really difficult to come up with new and interesting ways to include them in our diet which isn’t a plain boring old side salad.
Canadian food blogger Jessica Nadel from Cupcakes and Kale comes to the rescue with her first cookery book published this month, Greens 24/7.
In this cookery book, vegan writer Jessica shares over 100 of her quick and easy recipes incorporating over 40 different types of green. How about some Cinnamon Courgette Waffles for breakfast, Mango, Avocado and Cucumber Summer Rolls for lunch, Stuffed Baked Sweet Potatoes with Broccoli, Swiss Chard and Hummus for dinner and some delectable Courgette Chocolate Cake for afters?
The book is broken down into five comprehensive sections:
- Smoothies and Breakfasts
- Green Sides & Small Bites
- Green Soups & Salads
- Green Main Meals
- Green Cakes and Desserts.
There are also smaller but very well written introductory sections introducing the green ingredients used in the recipes, green fact files and information on some of the other ingredients used throughout the book. Green meal menu plans are also included.
Each recipe is accompanied by a beautiful, mouth-watering photograph by Jackie Sobon.
Designed by the incredibly talented Lucy over at Supergolden Bakes and published in the UK by Apple Press on the 8th of January 2014, this 176 page paperback cookbook retails for £14.99 and can be found on Amazon.
The book is packed full of inspiring vegan recipes – I am looking forward to the arrival of the spring greens in my weekly organic vegetable box to start getting creative with them again! This book is sure to be referred to time and time again in my kitchen.
One of the recipes which immediately struck me when I first opened the cook book was that for a green juice without the use of a juicer – simply blend the ingredients together and strain through a nut bag! Apple Press have kindly given me permission to reproduce the recipe below.
