Inspired by the Love Food Hate Waste campaign, Kate from Turquoise Lemons came up with the No Waste Food Challenge, a place to share recipes for leftover food or food that would otherwise end up in the bin. This month I am hosting this challenge for the first time and I set the challenge ingredient as apples. How do you use up those old apples that have been sitting in the fruit bowl far too long? (Besides doing what I often do, and that is feeding them to the local Shetland ponies!)
First up we have Mamacook’s Wholemeal Pancakes. She says that this is a great way of using apples which aren’t as fresh as they once were. She also suggests serving them with fried apples with cinnamon. I can vouch for her suggestion of serving them with honey as I tried them out myself and they were delicious! I froze the leftovers between sheets of greaseproof paper, as she also suggested, and they defrosted wonderfully. Great for a quick, healthy breakfast in the morning!
Next we have Choclette from Chocolate Log Blog and her delicate sounding Apple, Rose & White Chocolate cake made with homemade rose syrup. She describes this cake as “very appley with a just a hint of rose.” The white chocolate caramelizes slightly, she says, giving the cake a delicious toffee apple flavour.
Then we have an entry from the founder of the No Waste Food Challenge, Kate at Turquoise Lemons, with Blackberry and Apple Vodka. Kate thinks that these flavoured vodkas taste a little bit like bottling up Autumn, and that they would make perfect Christmas gifts. They were made from leftover apple and blackberry pulp after making homemade jelly; a great way to reduce food waste!
Finally, we have an entry from myself – a dish made by my eldest son (12). This curried chicken is a quick, inexpensive meal and the addition of the apples and raisins gives it a nice fruity flavour which is appealing for younger children.
