In 2003 French chef Blaise Vasseur, having witnessed the influence of wild plants on his native cuisine through chefs such as Michel Bras, asked Forager founder Miles Irving to supply wild plants to the newly opened Goods Shed in Canterbury.
This spark ignited a wild food renaissance in the UK. Now, 15 years on, a team of highly skilled foragers are hand-picking wild flavours at their peak, full of vitality which speak of the season. This is ‘hyper-seasonality’- a step up from seasonal eating of farmed produce!
Forager Ltd has been supplying UK’s top restaurants including the Hix group, The Ivy and Heston Blumenthal’s Fat Duck and Dinner, for the past 15 years and have introduced many wild ingredients to chefs and diners alike during that time.
The founder of the business Miles Irving authored The Forager Handbook, which was published in 2009 – the book documents their voyage of discovery with chefs such as James Lowe, Isaac McHale and René Redzepi and has been hailed as ‘the bible of foraging’.
Now Forager Ltd are embarking on a new endeavour: a wild box scheme. Through this they hope to introduce British wild ingredients to a wider public consisting of; but by no means limited to; food futurists, healthy & conscious eaters, vegans, vegetarians, paleo-diet enthusiasts and foodies.
Each week, subscribers will receive a selection of seasonal wild produce, combined with occasional preserved products such as lacto-fermented wild greens and dried seaweed. They will be supporting the box with several information channels, including a weekly newsletter explaining the box contents, informational videos through their YouTube channel, online recipes and a soon-to-be-launched podcast.

I’m a bit dubious about the scheme – I think I’d need to try it before I was convinced. The two beauties of foraged food are the joy of finding it for yourself and the utter freshness of eating it within hours (or even minutes) of being picked, and I can’t see how a box would give me either of these. But if the contents were delicious, I could be persuaded.
